Eggnog Cheesecake Bars

Cheesy almond bars: Impress your guests with this decadent dessert.
Ingredients:
  • 2 cups graham cracker crumbs (32 squares)
  • 3/4 cup butter or margarine, melted
  • 1/2 cup blanched whole almonds, finely chopped
  • 1/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 packages (8 oz each) cream cheese, softened
  • 2 teaspoons ground nutmeg
  • 1/2 cup whipping cream
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup blanched whole almonds, finely chopped, toasted
Instructions:
  • Preheat the oven to 350°F. Combine crust ingredients in a large bowl until fully mixed. Press the mixture into the bottom of an ungreased 13x9-inch pan. Bake for 8 minutes.
  • In a large clean bowl, use an electric mixer on medium speed to beat softened cream cheese. Gradually mix in granulated sugar, 1/4 cup brown sugar, nutmeg, cream, and vanilla. Incorporate eggs one at a time until creamy, then pour the mixture over the crust.
  • Continue baking for an additional 30 to 35 minutes until the center is firm. Sprinkle with 1/2 cup of toasted almonds, gently pressing them in. Allow to cool for 1 1/2 hours. To make bars, slice into 6 rows by 4 rows with a thin knife, wiping the blade as needed. Store covered in the refrigerator.
