Delicious make-ahead eggplant appetizer pairs perfectly with pork tenderloin and pasta.
Ingredients:
  • 1 tablespoon olive oil
  • 0.33333334326744 large eggplant
  • 1 egg
  • 1 tablespoon water
  • 1 cup dry bread crumbs
  • 1 tomato, chopped
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup Italian-style salad dressing
Instructions:
  • Preheat your oven to a toasty 375°F (190°C) and generously grease your baking sheet or pizza pan with fragrant olive oil.
  • Cut the eggplant into 8 evenly sliced rounds, about 1/4 to 1/2 inch thick, while keeping the round shape intact. Mix the egg and water in one small bowl and put the breadcrumbs in another small bowl.
  • Individually coat the eggplant slices in the egg and water mixture, followed by breadcrumbs. Arrange the slices in a single layer on the baking sheet or pizza pan. Lastly, evenly top with tomato, Parmesan cheese, and Italian-style salad dressing.
  • Place in the preheated oven for about 15 minutes, then switch the oven to broil and cook for an additional 3 to 5 minutes. Keep a close eye on the slices while broiling to prevent burning.
