Effortless BBQ skewers bursting with flavor - no need to worry about the sides!
Ingredients:
  • 1.25 gm smoked paprika
  • 500g eggplant
  • 2 (175g total) chorizo sausages
  • Olive oil cooking spray
Instructions:
  • Cube the eggplant and slice the chorizo. Thread the eggplant and chorizo onto skewers alternately. Arrange on a baking tray, spray with oil, sprinkle with paprika, and season generously with salt and pepper.
  • Preheat a barbecue plate or chargrill over medium heat. Grill skewers, turning occasionally, for 10 to 12 minutes, until eggplant is tender and chorizo is crispy. Transfer to a serving plate and accompany with lime wedges.
