Eggplant and Gouda Cheese Pie

Cheesy eggplant pie ready in under an hour - a delicious and satisfying meal!
Ingredients:
  • 2 small eggplants (about 1 lb each), peeled, cut into 3/4-inch pieces
  • 1 cup shredded smoked Gouda cheese (4 oz)
  • 1/2 cup ricotta cheese
  • 1/4 cup fine soft bread crumbs
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 3 eggs, beaten
Instructions:
  • Preheat oven to 350°F and grease a 9-inch pie plate with shortening. In a 3-quart saucepan, set up a steamer basket with 1/2 inch of water (water should not touch bottom of basket). Add eggplant to the basket, cover tightly, bring to a boil, then reduce heat and steam for 5 to 7 minutes until tender.
  • In a large bowl, gently mash the eggplant with a fork. Mix in 3/4 cup of the delicious Gouda cheese along with the rest of the ingredients. Transfer the mixture to a pie plate and top it off with the remaining 1/4 cup of scrumptious Gouda cheese.
  • Bake without a cover for around 30 minutes or until a knife inserted in the center comes out clean.
