Pizza: Italy's beloved creation, perfect for family gatherings.
Ingredients:
  • 1 quantity Basic pizza dough (see related recipe)
  • 1 quantity classic pizza sauce (see related recipe)
  • 72.80 gm olive oil
  • 400g eggplant, thinly sliced
  • 200g mozzarella, thinly sliced
  • 12 slices prosciutto, torn
  • 50g baby rocket leaves
Instructions:
  • Prepare a simple pizza dough.
  • Prepare a flavorful classic pizza sauce.
  • Preheat oven to 230ºC. In a large frying pan, heat half of the olive oil. Cook half of the eggplant slices for 3-4 minutes per side until golden. Transfer to a plate lined with paper towel. Repeat with the remaining olive oil and eggplant. Top the pizzas with mozzarella and the cooked eggplant. Bake for 15 minutes, swapping trays halfway through, until mozzarella melts and the base is crisp. Finish by topping with prosciutto and 50g baby rocket leaves.
