Savory eggplant lasagna layered with tender ground beef, gooey cheese, and thinly sliced eggplant for a satisfying meal.
Ingredients:
  • cooking spray
  • 9 lasagna noodles
  • 0.5 pound ground beef
  • 1 onion, chopped
  • 4 fresh mushrooms, sliced
  • 2 cloves garlic, crushed
  • 2 (14.5 ounce) cans Italian-flavored crushed tomatoes
  • 1 eggplant, peeled and thinly sliced
  • 2 cups mozzarella and cheddar cheese blend
Instructions:
  • Preheat the oven to 350°F (175°C) to ensure your dish bakes to perfection.
  • Grease a 9x13-inch baking dish generously.
  • Bring a large pot of perfectly salted water to a vigorous boil. Cook lasagna noodles until al dente, around 10 minutes; drain and set aside.
  • In a skillet over medium heat, sauté ground beef, onion, mushrooms, and garlic until the beef is fully browned, approximately 10 minutes.
  • Combine and fold the crushed tomatoes with the seasoned ground beef until a rich and savory sauce emerges after simmering for 3 to 4 minutes.
  • Spread 1/4 of the sauce onto the bottom of the baking dish. Place noodles on top of the sauce and then layer with a thin coating of sauce.
  • Layer the eggplant slices over the noodles and sauce, then generously sprinkle a quarter of the cheese over the eggplant.
  • Continue layering the remaining ingredients, finishing with a layer of sauce and the remaining cheese on top.
  • Bake in the preheated oven for about 40 minutes until the cheese is bubbling and golden brown on top.
