Cheesy eggplant and sweet potato cakes: a quick, easy, and delicious treat for vegetarians.
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 500g sweet potato, peeled, diced
  • 500g eggplant, diced
  • 2 green onions, chopped
  • 100g fetta, crumbled
  • 62.50 ml chopped fresh basil leaves
  • 437.50 ml fresh breadcrumbs
  • 1 egg, lightly beaten
Instructions:
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil. Sauté sweet potato and eggplant until very tender, stirring occasionally, for 10 to 15 minutes. Add garlic and onion and cook for an additional minute. Transfer the mixture to a bowl and let it cool completely.
  • Combine feta, basil, breadcrumbs, and egg with sweet potato mixture. Season generously with pepper. Mix thoroughly and form 6 patties. Chill in the refrigerator for 30 minutes.
  • In a large frying pan over medium-high heat, heat the remaining oil. Cook the patties in 2 batches for 4 to 5 minutes on each side or until golden and heated through. Serve hot.
