Delicious turmeric chicken stew with sweet potato, eggplant, and vibrant turmeric-ginger-garlic sauce.
Ingredients:
  • 2 skinless, boneless chicken breasts, cubed
  • 2 medium sweet potatoes, cubed
  • 0.5 medium red onion, chopped
  • 1 small eggplant, cubed
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger root
  • 2 teaspoons ground turmeric
  • 0.5 cup low-sodium chicken broth, or more as needed
Instructions:
  • In a large skillet over medium-high heat, sauté chicken in oil until cooked through, about 5 minutes. Add sweet potatoes and onion; cook until onion is translucent, around 2 to 3 minutes. Stir in eggplant, garlic, ginger, and turmeric; cook until fragrant, approximately 1 minute.
  • Add the broth and bring it to a boil. Then, reduce the heat and let it simmer, stirring occasionally. If needed, adjust by adding more broth. Cook until the vegetables are tender and the stew has thickened, about 20 minutes.
