Budget-friendly and delicious rice side dish.
Ingredients:
  • 50g butter
  • 2 medium brown onions, halved, thinly sliced
  • 4 cardamom pods, bruised
  • 2 tsp mustard seeds
  • 1/2 tsp dried chilli flakes
  • 1 tsp poppyseeds
  • 200.00 gm Basmati rice (see tip)
  • 382.50 gm chicken style liquid stock
  • 1/4 tsp ground turmeric
  • 400g can lentils, drained, rinsed chopped fresh coriander leaves, to serve
Instructions:
  • In a large saucepan over medium-high heat, melt butter. Add onion and garlic, and cook for 5 minutes until onion has softened. Stir in cardamom, mustard, chili, and poppyseeds, and cook for 1 minute until fragrant.
  • Place rice in a pot and pour chicken stock over it. Sprinkle turmeric on top. Cover and bring to a boil. Reduce heat and simmer for 10 minutes until liquid is absorbed. Add lentils and stir. Season with salt and pepper. Let it sit for 10 minutes. Garnish with coriander before serving.
