Savory eggplant patties are made by combining cheese, bread crumbs, parsley, garlic, and onion, then frying until golden brown.
Ingredients:
  • 2 medium eggplants, peeled and cubed
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup Italian seasoned bread crumbs
  • 2 eggs, beaten
  • 2 tablespoons dried parsley
  • 2 tablespoons chopped onion
  • 1 cup vegetable oil for frying
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Put the eggplant in a microwave-safe bowl and microwave on medium-high for 3 minutes. Flip the eggplant and microwave for another 2 minutes. If the eggplant is not tender, cook for an additional 2 minutes. Drain any liquid and mash the eggplant.
  • Mix together the cheese, bread crumbs, eggs, parsley, onion, garlic, and salt with the mashed eggplant until fully combined.
  • Form the eggplant mixture into patties and sizzle in hot oil until they turn golden brown on each side for about 5 minutes per side. The patties can be frozen prior to frying and saved for later.
