Savory pancakes with bacon and eggs, ready in just 30 minutes for a satisfying breakfast.
Ingredients:
  • 1 lb sliced bacon
  • 2 cups Original Bisquick™ Mix
  • 1 cup milk
  • 6 eggs
  • Salt and pepper to taste
  • Real maple or maple-flavored syrup
Instructions:
  • Dice bacon into 1/2-inch pieces and cook in a skillet or microwave until crispy to your liking.
  • Heat your griddle or skillet over medium-high heat or electric griddle to 375°F and grease it with cooking spray, vegetable oil, or shortening. It's ready when a few drops of water sprinkled on it dance and disappear.
  • Combine Bisquick® mix, milk, and 2 eggs in a medium bowl until smooth. Gently fold in three-fourths of the cooked bacon into the batter.
  • Pour a generous 1/3 cup of batter onto the sizzling griddle for each pancake. As soon as bubbles pop on the surface and the edges start to set, flip the pancake and cook until beautifully golden brown.
  • Cook the remaining 4 eggs and the last one-fourth portion of cooked bacon in a skillet over medium heat until scrambled. Season with salt and pepper to taste while the pancakes are cooking.
  • Transfer the cooked pancakes from the griddle. Use a biscuit cutter or round cookie cutter to create a hole in the center of every other pancake. Stack the cut pancake over a whole pancake on a serving plate. Fill the hole with eggs and bacon, then serve warm with syrup.
