Impress guests with easy homemade Eggs Benedict Florentine, featuring smoked ham and wilted spinach.
Ingredients:
  • 6 large egg yolks
  • 3 tablespoons lemon juice
  • 1 pinch ground white pepper
  • 0.5 cup butter, cut into small cubes
  • salt to taste
  • 1 pinch ground paprika
  • 1 teaspoon white vinegar
  • 8 large eggs
  • 8 slices Deli Thin Smoked Ham-Water Added OM
  • 0.5 cup fresh spinach, or to taste
  • 4 medium English muffins, split
  • 2 tablespoons butter, softened, or to taste
Instructions:
  • Create Hollandaise sauce: Combine egg yolks, lemon juice, and pepper in a saucepan over gentle heat. Gradually whisk in half of the butter until it is fully melted. Then whisk in the rest of the butter and salt until fully combined. Sprinkle in paprika and remove from heat, covering the saucepan to retain warmth.
  • Fill a large saucepan with 5 to 8 inches of water, add vinegar, and bring to a gentle simmer. Gently crack eggs into the water and cook for 3 to 4 minutes until whites are firm and yolks are thickened but still soft. Using a slotted spoon, transfer eggs to a kitchen towel-lined plate.
  • Warm ham in a skillet over medium-high heat for 2 to 3 minutes while the eggs are poaching. Microwave spinach sprinkled with water on a plate for 30 seconds and toast the English muffins.
  • Butter the toasted muffins, add ham, spinach, and a poached egg on top. Finish with a generous drizzle of Hollandaise sauce and serve promptly.
