Eggs in bread with wilted spinach and hollandaise

Start your day right with this simple and delicious breakfast idea.
Ingredients:
  • 4 slices bread (rustic or sourdough)
  • 60g unsalted butter
  • Hollandaise sauce (see note), to serve
  • Wilted spinach, to serve
Instructions:
  • Preheat the oven to 200°C and cut a hole in the center of each bread slice using an 8cm round cutter.
  • In a large ovenproof frypan over medium heat, melt butter. Cook bread in batches for 1-2 minutes until golden on one side, then flip. Return all bread, toasted-side down, to the pan (or a lined baking tray). Gently crack an egg into each hole, season, and bake for 3-4 minutes until eggs are just set.
  • Plate the dish elegantly using a fish slice, and serve alongside a side of fresh spinach and a generous drizzle of hollandaise sauce.
