Indulgent Ukrainian bread with eggs, raisins, and lemon zest, baked in round pans or coffee cans for a unique twist.
Ingredients:
  • 2 teaspoons white sugar
  • 0.5 cup lukewarm water
  • 2 (.25 ounce) packages active dry yeast
  • 1 cup milk, scalded and cooled
  • 1 cup all-purpose flour
  • 6 eggs
  • 1 cup white sugar
  • 1 cup butter, melted
  • 2 tablespoons lemon zest
  • 5.5 cups bread flour
  • 1 cup raisins
Instructions:
  • Combine 2 teaspoons of sugar, 1/2 cup water, yeast, milk, and 1 cup flour in a small bowl. Stir until fully mixed, cover, and let it rise in a warm spot until light and bubbly, approximately 30 minutes.
  • Beat eggs, salt, and 1 cup sugar until light and fluffy in a large bowl. Mix in melted butter and lemon zest. Add the sponge, then gradually incorporate the flour. Knead in the bowl for about 10 minutes, then mix in the raisins. Cover and let rise in a warm place until doubled in volume.
  • Deflate dough and knead briefly, allowing it to rise again. Coat 4 small coffee cans with softened butter. Fill each pan one-third full and let rise until level with the top. Preheat oven to 400°F (200°C).
  • Preheat oven and bake the bread for 15 minutes before reducing the temperature to 350 degrees F (175 degrees C). Bake for an additional 40 minutes. If the top browns too quickly, cover with foil. Remove loaves from pans and cool on a wire rack.
