Savory Ukrainian cabbage rolls with sausage and breadcrumb filling in a creamy sauce - a crowd pleaser!
Ingredients:
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 0.75 pound ground pork
  • 0.5 cup fresh bread crumbs
  • 1 large egg
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 head savoy cabbage, cored
  • 2 cups chicken stock, or as needed
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1 tablespoon chopped fresh dill
Instructions:
  • In a skillet over medium-high heat, melt butter and sautée onion until tender. Set aside to cool. Once cooled, combine with ground pork, bread crumbs, egg, salt, and pepper until well mixed.
  • In a large pot, gently submerge the cabbage head halfway in water. Bring to a gentle boil and cook for approximately 2 minutes. As the outer leaves turn soft and translucent, delicately peel them off one by one using a wooden spoon, and trim the thick ribs at the leaf stem.
  • Preheat the oven to 325 degrees F (165 degrees C), then prepare a 9x13-inch baking dish by greasing the bottom and lining it with outer cabbage leaves.
  • On a clean work surface, layer a few more cabbage leaves. Spoon a generous amount of the pork mixture onto the base of each leaf. Roll towards the top. Continue rolling until all the filling is used. Place the rolls on the leaves in the dish and pour in sufficient chicken stock to cover them. Top with more cabbage leaves.
  • Bake covered for 1 hour in the preheated oven. Once done, carefully drain cooking liquid into a small saucepan. Whisk sour cream with flour, then slowly blend into the broth. Simmer over medium heat, stirring often until heated through, around 5 minutes.
  • Arrange the cabbage rolls elegantly on a platter, drizzle with the savory sauce, and finish with a sprinkle of fragrant dill.
