Juicy chicken breasts filled with seasoned butter, coated with dill, and fried for perfect flavor and tenderness. Elevated taste with minimal effort.
Ingredients:
  • 8 (4 ounce) skinless, boneless chicken breast halves
  • 0.33333334326744 cup butter, softened
  • 1 teaspoon garlic powder
  • 3 tablespoons water
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 1 teaspoon dried dill weed
  • 0.5 cup all-purpose flour
  • 0.5 cup dry bread crumbs
  • 2 cups vegetable oil
  • 0.5 lemon, sliced
  • 0.25 cup chopped fresh parsley
Instructions:
  • Flatten each chicken breast between wax paper to 1/8 inch thickness using a mallet or rolling pin, ensuring the chicken is not torn. Wrap and refrigerate until the seasoned butter is frozen.
  • Prepare the seasoned butter by thoroughly mixing softened butter with 1/2 teaspoon of pepper and 1 teaspoon of garlic powder in a small bowl. Shape the mixture into a 2x4 inch rectangle on aluminum foil, then freeze until solid.
  • Cut the firm butter into 8 equal pieces and place one piece on each chicken breast. Fold the edges of the chicken over the butter and roll to fully encase it. Secure with toothpicks.
  • Beat eggs with water in a small bowl. In a separate shallow bowl, combine 1/4 teaspoon pepper, 1/4 teaspoon garlic powder, dill weed, and flour. Place bread crumbs in another bowl. Dip chicken rolls in seasoned flour, egg mixture, then crumbs. Transfer coated chicken to dish, cover, and refrigerate for about 30 minutes.
  • In a large skillet over medium-high heat, heat oil until hot. Deep fry chicken rolls for 5 minutes, flip, and fry for another 5 minutes until golden and fully cooked with no pink inside. Drain on paper towels, garnish with lemon slices and parsley, and serve.
