Eggs poached in savory tomato herb sauce with a hint of wine, perfect over pasta or bread.
Ingredients:
  • 2 tablespoons olive oil, or to taste
  • 0.5 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 8 cups tomato sauce
  • 0.25 cup dry red wine, or more to taste
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 0.25 teaspoon freshly ground black pepper, or more to taste
  • 1 bay leaf, or more to taste
  • 8 eggs
Instructions:
  • In a large skillet over medium heat, sauté onion and garlic in olive oil until tender, around 5 minutes.
  • Combine tomato sauce, red wine, fresh herbs, seasonings, and aromatics in a saucepan. Simmer over low heat for 45 minutes until the sauce has thickened.
  • One by one, crack the eggs into a bowl and gently transfer them into the tomato sauce. Cook until the eggs start to firm up, approximately 2 to 3 minutes. Spoon the sauce over the eggs until they are fully covered. Cover the skillet with a lid and simmer until the sauce thickens, around 30 minutes.
