Delicious vegetarian dish combining eggs, lentils, and fresh mint for a quick, satisfying meal.
Ingredients:
  • 9.20 gm olive oil, plus extra, to drizzle
  • 300g packet Cauliflower Vegetable Rice
  • 410g can diced tomatoes with garlic and onion
  • 1 red onion, thinly sliced
  • 125.00 ml chopped fresh mint leaves
  • 1/2 tsp ground sumac
  • 125.00 ml drained canned lentils
  • 100g baby spinach
  • 4 eggs
  • 20.00 ml dukkah
  • 130g (1/2 cup) natural yoghurt
Instructions:
  • In a large frying pan over medium heat, heat oil. Add cauliflower mix and stir for 3 minutes. Add tomatoes, then pour half a can of water into the pan. Mix well and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  • In a small bowl, mix together the onion, mint, and sumac.
  • Mix lentils into the hot vegetable mixture and season. Sprinkle with spinach and cover. Cook for 1 minute. Create four indentations in the mixture and carefully crack an egg into each one. Cook covered for 2-3 minutes or until the egg whites are fully set.
  • Divide the lentil and egg mixture onto plates. Add the mint mixture and a spoonful of yogurt on top. Drizzle with extra oil and sprinkle with dukkah. Season to taste before serving.
