Egyptian Spicy Lentil and Rice Pasta: A delicious and budget-friendly dish with lentils, rice, and pasta in a zesty tomato sauce. For a velvety texture, blend the sauce in a food processor.
Ingredients:
  • 0.75 cup brown lentils
  • 4 cups water
  • 0.75 cup uncooked long grain rice
  • 1 cup elbow macaroni
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 1 (15.5 ounce) can diced tomatoes
  • 0.25 teaspoon red pepper flakes, or to taste
  • salt and pepper to taste
Instructions:
  • In a large saucepan, simmer lentils in water for 25 minutes. Add rice and simmer for another 20 minutes until tender.
  • In a saucepan, boil lightly salted water. Cook macaroni until tender for about 8 minutes. Drain.
  • Heat vegetable oil in a large skillet until shimmering. Sauté onion and garlic until fragrant and golden. Add tomatoes, red pepper flakes, salt, and pepper. Simmer on medium heat for 10 to 20 minutes.
  • Combine the lentils, rice, and macaroni in a large serving dish, then toss with the tomato sauce until well combined.
