Layers of savory lentils, rice, macaroni, caramelized onions, and vibrant tomato sauce create a delicious Egyptian vegetarian feast.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 cups uncooked white rice
  • 3 cups water
  • 1 (16 ounce) package uncooked elbow macaroni
  • 1 cup beluga lentils, soaked in water
  • 5 onions, minced
  • 3 tablespoons distilled white vinegar
  • 4 ripe tomatoes, diced
  • 0.5 cup tomato paste
  • 2.5 teaspoons ground cumin
  • 0.25 teaspoon cayenne pepper
Instructions:
  • In a saucepan over medium-high heat, warm up 1 tablespoon of vegetable oil. Mix in rice and stir until coated with oil, around 3 minutes. Pour in 3 cups of water and add 1 teaspoon of salt. Once it boils, lower the heat, cover, and simmer for 20 to 25 minutes until the rice is tender and liquid is absorbed.
  • Bring a large pot of lightly salted water to a rolling boil. Add the macaroni and cook uncovered, stirring occasionally, for about 8 minutes until al dente. Drain well in a colander and return to the pot to keep warm.
  • Begin by allowing the lentils to rest in water for 30 minutes, then thoroughly rinse and drain them. Boil 2 cups of water and add the lentils, bringing them to a boil once more. Lower the heat, cover, and simmer until the lentils are tender, about 15-20 minutes. Finally, fold in 1/2 teaspoon of salt.
  • In a large skillet set over medium-high heat, warm 1 tablespoon of vegetable oil. Sauté the onions in the oil, stirring occasionally, until beautifully caramelized and slightly browned, for about 10 to 15 minutes. Introduce the garlic and cook for an additional minute. Take out the mixture from the skillet and drain it on a paper towel-lined plate.
  • Transfer half of the flavorful onion mixture to a saucepan. Incorporate the vinegar, chopped tomatoes, tomato paste, black pepper, 2 1/2 teaspoons salt, cumin, and cayenne (if desired). Bring to a boil, then lower the heat to medium-low and gently simmer for approximately 12 minutes.
  • To serve, layer spoonfuls of rice, macaroni, and lentils on serving plates. Garnish with browned onions and a dollop of tomato sauce.
