Indulgent chocolate cake with rich ganache and cream cheese chocolate buttercream frosting - a must for chocoholics!
Ingredients:
  • 2.25 cups all-purpose flour
  • 2 teaspoons baking soda
  • 6 (1 ounce) squares unsweetened chocolate, chopped
  • 0.5 cup unsalted butter
  • 2.5 cups dark brown sugar
  • 3 eggs
  • 1.5 teaspoons vanilla extract
  • 1 cup sour cream
  • 1 cup water
  • 0.25 cup unsalted butter
  • 1 egg yolk
  • 4 cups confectioners' sugar
  • 2 tablespoons vanilla extract
  • 2 tablespoons heavy cream
  • 2 cups bittersweet chocolate chips
  • 1 cup heavy cream
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while you generously grease and flour two 9-inch pans. Next, sift together the flour, baking soda, and salt, then set aside. In a double boiler, gently heat 6 ounces of chocolate until melted and smooth. Let it cool until lukewarm before using.
  • In a large bowl, beat the butter and brown sugar until creamy. Add eggs one at a time, then mix in 1 1/2 teaspoons vanilla. Fold in melted chocolate. Alternate adding flour mixture and sour cream, then stir in boiling water. Pour batter into prepared pans.
  • Simply bake in the preheated oven for 35 to 40 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Chocolate Buttercream Frosting: Melt 6 ounces of chocolate in a double boiler until smooth. Set aside to cool. In a large bowl, whip butter until fluffy for about 10 minutes, then beat in an egg yolk. Gradually mix in confectioners' sugar, alternating with 2 tablespoons of vanilla and 2 tablespoons of cream. Blend in the cooled melted chocolate, then mix in the softened cream cheese.
  • Prepare the Ganache: Melt chocolate chips with 1 cup of heavy cream in a large saucepan over low heat, stirring continuously until smooth. Set aside once melted.
  • Once the cake has cooled completely, generously spread ganache over the bottom cake layer. Chill for 5 minutes until ganache is firm. Layer on the frosting, then place the top cake layer on top. Frost the top and sides with buttercream and decorate with extra ganache.
