Regal date nut cake with a decadent broiled coconut crown.
Ingredients:
  • 1 cup boiling water
  • 1 cup dates, pitted and chopped
  • 0.25 cup butter, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup chopped walnuts
  • 1 cup flaked coconut
  • 0.66666668653488 cup packed brown sugar
  • 6 tablespoons butter
  • 0.25 cup cream
Instructions:
  • Place dates in a small bowl and cover them with hot water. Allow them to cool before proceeding.
  • In a small bowl, combine flour, baking powder, baking soda, salt, and nuts. Mix well.
  • In a mixing bowl, combine 1/4 cup butter or margarine with white sugar and cream together. Beat in egg and vanilla. Gradually add flour mixture in three parts, alternating with date mixture in two parts, starting and ending with the dry mixture. Spread the batter into a greased 9 x 13 inch pan.
  • Bake at 350°F (175°C) for 30-40 minutes, or until a wooden pick comes out clean.
  • Prepare the topping by combining coconut, brown sugar, 6 tablespoons of butter, and cream in a small saucepan over medium heat. Allow the mixture to boil for three minutes. Once ready, spread it over the warm cake and then broil until golden brown.
