Classic no-fail sponge cake

Indulge in a light and fluffy sponge cake filled with jam, cream, and fresh berries - guaranteed to leave you craving more.
Ingredients:
  • 150g plain flour
  • 4.00 gm baking powder
  • 6 large eggs, at room temperature
  • ¾ cup (165g) caster sugar
  • 8.80 gm Queen Organic Vanilla Essence
  • 75g unsalted butter, melted, cooled
  • 600ml thickened cream
  • 8.80 gm Queen Concentrated Vanilla Extract
  • ½ cup (170g) strawberry or raspberry jam Fresh strawberries, to decorate
  • Queen Meringue & Pavlova Powder Mix
Instructions:
  • Follow the instructions on the package to make the meringue and pavlova mix, stirring in vanilla extract. Use a piping bag to form meringues on a baking sheet and bake at 100°C fan-forced/120°C conventional for 1 hour.
  • Preheat the oven to 160°C fan-forced or 180°C conventional. Grease and line both 20cm round cake tins.
  • Triple sift the flour and baking powder together to ensure a light and airy texture. Keep aside.
  • Using a stand mixer with whisk attachment, beat eggs, caster sugar, and vanilla essence on high speed for 15 minutes until the mixture becomes thick and pale.
  • Gradually sift a quarter of the flour mixture into the egg mixture and gently fold using a large metal spoon. Continue this process with the remaining flour mixture, being mindful not to over mix.
  • Add a generous spoonful or two of the batter into the melted butter mixture in a separate bowl and mix well.
  • Gently fold butter into sponge batter until fully combined and no streaks remain.
  • Divide the batter between two greased tins and level the tops. Bake for 20-25 minutes or until the surface bounces back when touched lightly. Let the cakes cool in the tins for 5 minutes before transferring them to a wire rack to cool completely.
  • Beat the cream and vanilla extract until stiff peaks form.
  • Lay down the initial sponge layer on a serving plate and generously spread it with vanilla cream. Finish by topping it with berries and a drizzle of jam.
  • Layer the remaining sponge on top, followed by an additional dollop of cream, fresh strawberries, jam, and meringues for a beautiful and decadent finish.
