Classic no-bake vanilla cheesecake

Impress with a show-stopping no-bake vanilla cheesecake for effortless entertaining.
Ingredients:
  • 250g packet plain sweet biscuits (see note)
  • 9.00 gm powdered gelatine
  • 500g cream cheese, softened
  • 141.90 gm caster sugar
  • 2 tsp vanilla bean paste
  • 300ml thickened cream, whipped
  • Hulled and halved strawberries, to decorate
Instructions:
  • 1. Prepare a 20cm-round springform pan by greasing the base. 2. In a food processor, pulse biscuits until they become fine crumbs. 3. Add butter to the processor and blend until well combined. 4. Press the buttery biscuit mixture onto the base and sides of the pan. 5. Chill in the refrigerator for 10 minutes before using.
  • In a small microwave-safe bowl, add 1 1/2 tbsp water and sprinkle in the gelatine. Stir until well combined. Microwave for 10 seconds (do not overheat). Whisk with a fork until the gelatine dissolves.
  • In the meantime, whip cream cheese, sugar, and vanilla with an electric mixer until fluffy. Slowly incorporate the gelatin mixture until well combined. Gently fold in whipped cream. Pour into the pan, level the top with a spatula, cover, and chill overnight until set.
  • Take the cheesecake out of the pan and beautifully adorn the top with halves of succulent strawberries before serving.
