Delicious Gouda, egg, and ham empanadas - perfect for a quick Mediterranean-inspired meal or snack!
Ingredients:
  • 2 cups cubed ham
  • 2 cups cubed Gouda cheese
  • 3 hard-boiled eggs, chopped
  • 12 empanada pastry discs
Instructions:
  • Preheat the oven to a toasty 350 degrees F (180 degrees C) and give those 2 baking sheets a quick spritz with cooking spray.
  • Mix the ham, Gouda cheese, and hard-boiled eggs in a bowl until evenly combined.
  • Place pastry disks on a flat surface and moisten the edges with a touch of water. Spoon a generous amount of ham and cheese mixture in the middle. Fold the pastry over and firmly press the edges with a fork to seal perfectly.
  • Lay empanadas on baking sheets and generously brush with beaten egg.
  • Bake in the preheated oven for 20-25 minutes until golden brown. Allow to cool for 5 minutes before serving.
