Parmesan Breaded Chicken [Milanesas de Pollo Empanizadas a la Parmesana]

30-Minute Dinner: Juicy chicken coated in crispy Progresso® bread crumbs and simmered in flavorful Muir Glen® tomatoes.
Ingredients:
  • 4 boneless skinless chicken breasts (1 lb)
  • 1/3 cup Progresso™ Italian style bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup fat-free egg product or 2 egg whites
  • 1 tablespoon vegetable oil
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1/2 cup reduced-fat shredded mozzarella cheese (2 oz)
Instructions:
  • Place each chicken breast between sheets of plastic wrap or waxed paper and pound with a meat mallet or rolling pin until 1/4 inch thick.
  • Mix together breadcrumbs and Parmesan cheese in one dish for a delicious coating. In a separate dish, place the egg product. Dip the chicken in the egg first, then coat it with the crumb mixture for a crispy finish.
  • Heat oil in a 12-inch nonstick skillet over medium heat. Add chicken and cook for about 5 minutes, turning once, until both sides are golden brown.
  • Add the remaining ingredients and bring the mixture to a boil. Lower the heat, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the chicken is cooked through (170°F). Sprinkle with mozzarella cheese before serving.
