Air fried Parmesan-crusted chicken breasts: juicy and crispy.
Ingredients:
  • 1 large egg, beaten
  • 0.5 cup all-purpose flour
  • 0.75 cup dry bread crumbs
  • 0.33333334326744 cup freshly grated Parmesan cheese
  • 0.25 cup flax seed meal
  • 2 teaspoons lemon zest
  • 0.25 teaspoon ground cayenne pepper
  • 0.25 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 3 (6 ounce) boneless skinless chicken breasts, flattened slightly
Instructions:
  • In a shallow bowl, place the beaten egg. In another bowl, add the flour. In a third bowl, mix the bread crumbs, Parmesan cheese, flax seed meal, lemon zest, oregano, cayenne, salt, and pepper together.
  • Coat each chicken breast in flour, egg, and breadcrumbs, ensuring full coverage on both sides. Place the coated chicken in an air fryer basket, working in batches if needed due to air fryer size.
  • Preheat the air fryer to 375 degrees F (190 degrees C, then air fry the chicken breasts for 10 minutes. Flip and continue cooking until chicken is fully cooked and reaches an internal temperature of 165 degrees F (74 degrees C), about 5 more minutes. The coating should be golden and crispy.
