Oven-baked garlic-Parmesan chicken thighs: crispy outside, juicy inside - no frying necessary!
Ingredients:
  • avocado oil cooking spray
  • 2 teaspoons granulated garlic
  • 1 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 1 cup Italian-style panko bread crumbs
  • 0.5 cup shredded Parmesan cheese
  • 2 pounds boneless, skinless chicken thighs
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously spray a 9x13-inch baking pan or roasting dish with avocado oil.
  • Mix together eggs, garlic, salt, and pepper in a wide shallow bowl until fully incorporated. Combine panko and Parmesan cheese on a plate.
  • Take the chicken thighs and pat them dry. Dip each thigh into the egg mixture, then coat in panko crumbs on both sides, ensuring excess is shaken off. Place them on the prepared pan, spray the tops lightly with avocado oil, and then you're ready to bake.
  • Roast until the center is no longer pink and the juices run clear, for 25-35 minutes at the preset temperature. Ensure each thigh reaches at least 165 degrees F (74 degrees C) when probed with an instant-read thermometer.
