Garlicky breaded chicken baked to crispy perfection without the mess of pan-frying.
Ingredients:
  • 2 large skinless, boneless chicken breasts
  • salt and freshly ground black pepper to taste
  • cayenne pepper to taste
  • 3 tablespoons unsalted butter
  • 0.5 cup panko bread crumbs
  • 3 cloves garlic, finely crushed
  • 1 tablespoon finely chopped Italian parsley
  • 2 tablespoons grated Parmigiano-Reggiano cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon balsamic vinegar
  • 1.5 teaspoons Dijon mustard
  • 0.25 cup chicken broth
  • 0.33333334326744 cup chicken broth
  • 1 lemon, juiced
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Generously season both sides of the chicken breasts with a mixture of salt, black pepper, and cayenne for a flavorful kick.
  • In a hot, oven-safe skillet, sear chicken breasts in olive oil until golden brown, about 2 minutes per side.
  • Lower the heat to medium-low and melt the butter in the pan. Then, add the panko breadcrumbs and cook, stirring continuously, until they begin to golden, approximately 2 to 3 minutes. Next, mix in the garlic and cook until it becomes fragrant, for about 1 minute. Turn off the heat and gently fold in the parsley and Parmigiano-Reggiano to prepare the breading mixture. Set it aside for later use.
  • In a small bowl, mix together mayonnaise, balsamic vinegar, and Dijon mustard. Coat the chicken breasts with the mixture, then coat them with the bread crumb mixture. Return the chicken breasts to the skillet using a spatula, and pour chicken broth around them.
  • Bake in the oven until chicken is no longer pink in the center, about 10-12 minutes. Use an instant-read thermometer to check that it reaches at least 165 degrees F (74 degrees C). Transfer chicken to a plate to rest while preparing the pan sauce.
  • In a pan, combine chicken broth and lemon juice, then bring to a vigorous boil. Add balsamic vinegar and simmer until sauce thickens, around 2 minutes. Strain the sauce and drizzle over the chicken.
