Creamy chicken enchiladas.
Ingredients:
  • 2 cups cubed cooked chicken
  • 1 cup sour cream
  • 0.125 teaspoon salt
  • 1 pinch ground black pepper
  • 0.5 cup vegetable oil for frying
  • 12 (5 inch) corn tortillas
  • 1 (4 ounce) can chopped green chilies, drained
  • 2 cups shredded Monterey Jack cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and grease a 9x13 inch baking dish. Mix chicken with sour cream, salt, and pepper in a bowl; then set aside.
  • In a skillet over medium-high heat, warm the oil until shimmering. Fry the corn tortillas individually in the hot oil until softened, about 10 seconds each.
  • Place a generous spoonful of the chicken mixture onto each tortilla, spread it down the center, and roll it into a cylinder shape. Arrange the tortillas seam side down in the baking dish.
  • Sprinkle green chiles over the filled and rolled tortillas, then top them with shredded Monterey Jack cheese.
  • Bake until the cheese is gooey and enchiladas are piping hot, about 12 to 15 minutes in the preheated oven.
