Generational stacked enchiladas - quick, easy, and delicious family favorite.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon chili powder
  • 1 (19 ounce) can enchilada sauce
  • 2 cups shredded iceberg lettuce
  • 2 cups shredded Colby cheese
  • 1 (12 ounce) package corn tortillas
  • 1 onion, chopped
  • 0.5 cup sour cream
  • 6 fried eggs
Instructions:
  • In a large skillet over medium heat, sizzle the oil before adding chicken to achieve a golden brown color. Sprinkle with cumin and chili powder for a burst of flavor. Pour in the enchilada sauce and let it simmer gently for 15 minutes, stirring here and there to blend the flavors.
  • Warm the tortillas in a skillet over medium heat until they are soft and pliable, without frying them.
  • Dip a tortilla in the enchilada sauce and place it on a serving plate. Layer with meat and sauce, shredded lettuce, cheese, onion, and sour cream. Top with another sauce-dipped tortilla and repeat layering to your liking. Create individual stacks for each guest and optionally crown with a fried egg. Enjoy!
