Mouthwatering North African-inspired tapas, perfect with grilled pork chops and crusty bread. Great as a side dish or light meal.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 4 cloves garlic, minced
  • 0.5 onion, diced
  • 1 (10 ounce) box frozen chopped spinach, thawed and drained well
  • 1 (12 ounce) can garbanzo beans, drained
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
Instructions:
  • In a skillet over medium-low heat, sauté garlic and onion in olive oil until translucent, approximately 5 minutes. Add spinach, garbanzo beans, cumin, and salt. Gently mash the beans with your spoon while stirring. Cook until heated through.
