Garbanzos con espinacas (Spanish chickpeas with spinach)

Budget-friendly vegetarian Spanish main. Perfect!
Ingredients:
  • 3 slices wholegrain bread, crusts removed
  • 60ml (1/4 cup) olive oil
  • 2 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 5.00 gm ground sweet paprika
  • 1 x 400g can chickpeas, rinsed, drained
  • 1 x 150g pkt baby spinach leaves
Instructions:
  • Add the bread to the food processor bowl and pulse until coarse crumbs are achieved.
  • In a large frying pan over medium-high heat, warm the oil. Stir in the breadcrumbs and cook for 3-4 minutes until they turn lightly toasted. Add the garlic, cumin, and paprika, continue stirring, and cook for 1 minute until fragrant.
  • Toss in the chickpeas and spinach and cook for 2-3 minutes until the spinach wilts. Serve right away.
