Espresso cherry trifle

Decadent coffee, cherry, and chocolate trifles - a quick and easy dessert for busy times.
Ingredients:
  • 40.00 ml marsala (see note)
  • 40.00 gm caster sugar
  • 125.00 ml strong espresso coffee, cooled slightly
  • 4 mini jam sponge rolls, cut into 5mm-thick slices
  • 50g good-quality dark chocolate, grated
  • 120.00 gm thick vanilla custard
  • 425g can black pitted cherries, drained
Instructions:
  • Mix together the marsala, sugar, and coffee in a jug, stirring until the sugar completely dissolves.
  • Place the sponge slices evenly into four 400ml-capacity whisky glasses. Set aside 1 tablespoon of the coffee mixture. Pour the rest of the coffee mixture over the sponge slices for a flavorful soak.
  • Layer half of the chocolate, followed by all of the custard and cherries. Drizzle with the coffee mixture, then sprinkle with the remaining chocolate before serving.
