Espresso martini slice recipe

Decadent cocktail-inspired slice: Layers of rich coffee liqueur and chocolate with choc-coated coffee beans. Simply irresistible!
Ingredients:
  • 24 chocolate-coated coffee beans
  • 250g plain chocolate biscuits
  • 30.00 ml instant coffee
  • 90g unsalted butter, melted
  • 400g dark chocolate
  • 200ml pouring cream
  • 40.00 ml coffee flavoured liqueur
  • 180g white chocolate, chopped
  • 6.90 gm vegetable oil
Instructions:
  • Prepare a 16 x 26cm slice pan by greasing it lightly and lining it with baking paper, ensuring the paper extends over the two long sides.
  • Pulse biscuits and 2 teaspoons of coffee in a food processor until finely crushed. Add butter and pulse until combined. Press mixture evenly into the pan and chill in the fridge until needed.
  • Set aside 1 square of dark chocolate. Roughly chop the rest of the dark chocolate. Combine the chopped dark chocolate, cream, coffee liqueur, and 1 tablespoon of coffee in a heatproof bowl over simmering water (make sure the bowl doesn't touch the water). Stir until smooth and melted. Pour the mixture over the base and chill in the fridge for 2 hours until firm.
  • Combine the white chocolate, oil, and reserved dark chocolate square in a heatproof bowl set over a saucepan of simmering water (ensuring the bowl doesn't touch the water). Stir until smooth. Let it cool for a bit. Pour the mixture onto the filling, spreading it to the edges swiftly. Garnish with coffee beans. Chill in the fridge for 2 hours until firm.
  • Cut the dish into small squares using a hot, dry knife before serving.
