Everyone Loves It Chocolate Mousse

Indulgent chocolate mousse that will become a holiday favorite with its light and creamy texture.
Ingredients:
  • 3 (12 ounce) bags semisweet chocolate chips
  • 1 (11.5 ounce) package milk chocolate chips
  • 0.75 cup coffee
  • 8 egg yolks
  • 8 cups heavy whipping cream
  • 0.5 cup white sugar
  • 16 egg whites
Instructions:
  • Combine semisweet and milk chocolate chips in a heavy saucepan over very low heat, stirring until melted. Stir in the coffee, then remove from heat and let cool to room temperature.
  • Incorporate the egg yolks, one by one, into the rich chocolate mixture.
  • Using an electric hand mixer, whip heavy cream in a large mixing bowl until thick. Slowly incorporate sugar until mixture forms stiff peaks.
  • Whisk egg whites with salt in a clean glass or metal bowl until stiff peaks form. Gently fold this into the cream mixture. Add 1/3 of this mixture into the chocolate mixture and stir. Carefully fold the remaining cream-and-egg mixture into the lightened chocolate base and gently combine. Pour the mixture into a serving bowl or individual dessert cups.
  • Refrigerate until firm, approximately 2 hours.
