Ingredients:
  • 60ml sunflower oil
  • 42.00 gm lime juice
  • 2.00 long green chilli, seeds removed, finely chopped
  • 2 tsp grated ginger
  • 1 garlic clove, finely chopped
  • 2 tsp garam masala (Indian spice mix)
  • 1 tsp ground turmeric
  • 24.80 gm tikka or tandoori paste
  • 1kg green prawns
  • Prawn crackers, to serve (optional)
  • 1 mango, chopped
  • 1 Lebanese cucumber, chopped
  • 1 small red onion, finely chopped
  • 60ml lime juice
  • 62.50 ml chopped mint leaves
  • 62.50 ml chopped coriander leaves
Instructions:
  • Combine oil, lime juice, chili, ginger, garlic, spices, and tikka paste in a food processor and blend until smooth. Transfer the mixture to a shallow dish, add prawns, and toss to coat. Cover, refrigerate, and let marinate for 4 hours.
  • Prepare the salsa by mixing all the ingredients in a bowl, and let it sit at room temperature for 30 minutes to enhance the flavors.
  • Preheat a lightly oiled chargrill pan or barbecue to medium-high heat. Grill prawns in batches for 1-2 minutes, turning, until cooked. Serve with salsa and prawn crackers, if desired.
