Tandoori chicken skewers with raita

Tandoori spiced chicken skewers are a surefire hit with guests.
Ingredients:
  • 102.30 gm tandoori paste
  • 21.00 gm lime juice
  • 82.50 ml plain yoghurt (thick)
  • 900g chicken breast fillets, trimmed, cut into 2cm pieces
  • Olive oil cooking spray
  • Naan bread, to serve
  • Mango chutney, to serve
  • 250.00 ml plain yoghurt
  • 2 garlic cloves, crushed
  • 1 Lebanese cucumber, grated
  • 62.50 ml fresh mint leaves, finely chopped
Instructions:
  • Mix tandoori paste, lime juice, and yogurt in a bowl. Skewer the chicken, then place in a large ceramic dish and generously coat with the tandoori mixture. Refrigerate for a minimum of 3 hours, allowing the flavors to meld perfectly.
  • Prepare a refreshing raita by mixing yoghurt, garlic, cucumber, mint, salt, and pepper in a bowl. Chill in the refrigerator.
  • Prepare the barbecue plate or chargrill pan by spraying it with oil and heating it over medium heat. Take the skewers out of the marinade and lightly spray them with oil. Cook them, turning and brushing with marinade occasionally, for 8 to 10 minutes or until fully cooked. Serve with raita, warm naan, and chutney.
