Tandoori chicken skewers

Family-friendly Indian spiced chicken skewers for a crowd-pleasing meal.
Ingredients:
  • 750g chicken breast fillets, chopped
  • 77.50 gm tandoori curry paste
  • 250.00 ml Greek Style Yoghurt
  • 1 Lebanese cucumber, diced
  • 8 pieces roti bread (see note)
  • 2 tomatoes, chopped
Instructions:
  • Skewer the chicken and arrange in a ceramic dish. Mix tandoori paste with half of the yoghurt and drizzle over the chicken, ensuring it is well coated. Refrigerate for 30 minutes, if possible.
  • Finely dice 1/4 cup of fresh mint leaves. Mix the diced mint with cucumber and the rest of the yogurt. Season with a pinch of salt and pepper.
  • Preheat barbecue grill to medium heat and lay a piece of baking paper on the grill. Grill the skewers for 4 minutes on each side until the chicken is just cooked through. Grill the roti for 1 to 2 minutes on each side until warmed.
  • Evenly distribute skewers onto plates. Garnish with tomatoes and the rest of the mint. Accompany with roti and a side of cucumber yogurt mixture.
