Sautéed mixed mushrooms with garlic in butter, blended with walnuts for a flavorful pate.
Ingredients:
  • 1 cup walnuts
  • 0.5 cup minced shallots
  • 0.5 cup unsalted butter
  • 0.25 pound shiitake mushrooms, chopped
  • 0.25 pound crimini mushrooms, chopped
  • 0.25 pound portobello mushrooms, chopped
  • 1 tablespoon roasted garlic puree
  • 0.25 cup chopped fresh Italian parsley
  • 1 tablespoon chopped fresh thyme
  • 0.5 teaspoon white pepper
  • 2 tablespoons extra-virgin olive oil
Instructions:
  • Preheat the oven to 350°F (175°C). Evenly arrange walnuts on a baking sheet and bake for 10 minutes, or until they are aromatic and golden brown.
  • In a large saute pan, saute shallots in butter over medium heat until translucent. Add mushrooms, garlic, parsley, thyme, salt, and pepper. Cook, stirring frequently, until most of the liquid evaporates.
  • Blend toasted walnuts and olive oil until a thick paste forms. Add the cooked mushrooms and blend to your preferred texture.
  • Press the mixture firmly into oiled ramekins or a bowl. Seal with plastic wrap and refrigerate for several hours or up to overnight.
