Beef wonton noodle soup with Asian mushrooms

Experience Asia at home with savory beef wonton noodle soup featuring exotic Asian mushrooms.
Ingredients:
  • 500g packet 3 star beef mince
  • 2 tsp minced garlic
  • 1 tsp Chinese five-spice powder
  • 62.50 ml chopped coriander stalks
  • 1 tsp sesame oil
  • 21.00 gm light soy sauce
  • 24.40 gm oyster sauce
  • 1 tsp ground white pepper
  • 1 pkt wonton skins
  • 2l chicken style liquid stock
  • 200g dried rice noodles, cooked according to packet instructions
  • 500.00 ml gourmet mushroom selection (shitake, enoki, oyster)
  • 1 long red chilli, thinly sliced
  • 125.00 ml fresh coriander, to garnish
Instructions:
  • Combine beef mince, garlic, five spice, coriander, sesame oil, soy sauce, oyster sauce, and white pepper in a mixing bowl, then mix thoroughly with your hands.
  • Place a wonton wrapper on a clean surface, place 2 teaspoons of beef mince mixture in the center. Moisten two edges with water, fold opposite edges to form a triangle, pressing out air. Dip bottom edges in water, fold onto themselves and press. Repeat with remaining mixture.
  • In a large saucepan, bring the stock to a boil. Then, reduce the heat to a simmer. Add the wontons in batches of 5-8 at a time (depending on the saucepan size) and cook for around 5 minutes. Repeat with the remaining wontons.
  • Prepare the mushrooms by separating the enoki mushrooms and thinly slicing the shiitake mushrooms. Blanch them in hot stock for one minute, then remove with a slotted spoon and set aside before serving.
  • To enjoy, fill a bowl with a generous serving of noodles, add 5 wontons, a variety of mushrooms, and pour over the steaming broth. If desired, sprinkle some fresh coriander and chilli on top for extra flavor.
