Easy Homemade Beef and Ricotta Ravioli

Quick and easy beef ravioli using wonton wrappers - perfect for making ahead and freezing.
Ingredients:
  • 0.5 pound ground beef
  • 0.25 medium onion, chopped
  • salt and ground black pepper to taste
  • 1 (15 ounce) container ricotta cheese
  • 0.25 cup freshly grated Parmesan cheese
  • 3 tablespoons finely chopped fresh parsley
  • 1 large egg
  • 1 tablespoon all-purpose flour, or as needed
  • 30 wonton wrappers
  • 1 large egg yolk, beaten
Instructions:
  • In a skillet over medium heat, cook ground beef with onion, garlic, salt, and pepper until beef is browned and crumbly and onion is translucent, about 10 minutes. Drain any excess fat.
  • Combine the beef mixture with ricotta cheese, Parmesan cheese, fresh parsley, and egg in a large bowl until fully mixed.
  • Prepare a baking sheet by lining it with parchment paper and lightly dusting it with flour. Then, arrange 15 wonton wrappers on a floured surface.
  • Place 1 tablespoon of filling in the center of a wrapper. Use beaten egg yolk to lightly coat the edges of the wrapper. Place another wrapper on top and press gently. Pinch edges tightly to seal, removing excess air. Use a fork to crimp the edges and place on parchment paper. Repeat to make more ravioli.
  • Bring a large pot of salted water to a boil. Cook ravioli until al dente, about 1 to 3 minutes. Drain and serve.
