Homemade beef meatballs, kid-friendly. Magnifico!
Ingredients:
  • Olive oil cooking spray
  • 2 medium brown onions, finely chopped
  • 3 garlic cloves, crushed
  • 40.00 ml chopped fresh oregano leaves
  • 450g lean beef mince
  • 82.50 ml grated parmesan cheese
  • 150g brown rice
  • 100g mixed vegetables
  • Pinch ground nutmeg
  • 2 x 400g cans no-added-salt chopped Italian tomatoes
  • 41.60 gm salt-reduced tomato sauce
  • Mashed pumpkin, to serve
Instructions:
  • Coat a frying pan with oil and heat over medium. Add in onion, garlic, and oregano. Sauté while stirring for 5 minutes. Take off heat and let it cool for 10 minutes.
  • Combine half of the onion mixture with mince, Parmesan, rice, vegetables, nutmeg, salt, and pepper in a food processor. Process until well combined. Shape tablespoons of the mixture into balls using wet hands. Refrigerate for 15 minutes covered with plastic wrap before serving.
  • In a saucepan, warm up the leftover onion mixture over medium heat. Stir in the tomatoes and tomato sauce. Bring the mixture to a boil, then lower the heat to simmer gently for 15 minutes, stirring occasionally, until it thickens slightly.
  • Spray a large frying pan with oil and heat over medium-high heat. Brown meatballs in batches by cooking for 5 minutes, then transfer them to the sauce. Simmer for an additional 5 minutes until fully cooked. Serve with mashed pumpkin and parmesan.
