Cheesy beef and rice stuffed peppers baked in 30 minutes for a quick and tasty dinner.
Ingredients:
  • 6 green bell peppers
  • salt to taste
  • 0.33333334326744 cup chopped onion
  • salt and pepper to taste
  • 1 (14.5 ounce) can whole peeled tomatoes, chopped
  • 0.5 cup water
  • 0.5 cup uncooked rice
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded Cheddar cheese
  • 2 (10.75 ounce) cans condensed tomato soup
  • water as needed
Instructions:
  • 1. In a large pot, bring salted water to a boil. 2. Cut the tops off the bell peppers and remove the seeds. 3. Boil the bell peppers in the water for 5 minutes, then drain. 4. Sprinkle the insides of each bell pepper with salt and set aside.
  • In a large skillet over medium heat, cook ground beef and onion until beef is browned, about 5 minutes. Drain off excess fat, season with salt and pepper, then add tomatoes, 1/2 cup water, rice, and Worcestershire sauce. Reduce heat to low, cover, and simmer until rice is tender, about 15 minutes. Remove from heat and stir in cheese.
  • Preheat your oven to 350°F (175°C).
  • Fill each bell pepper with a savory blend of beef and rice; place them open-side up in a baking dish.
  • Mix tomato soup with the right amount of water until it reaches a gravy consistency in a medium bowl; pour over the bell peppers and cover with aluminum foil.
  • Bake in the oven until the cheese is melted and bubbly, about 25-30 minutes.
