Easy Stuffed Green Peppers

Savory stuffed bell peppers filled with savory ground beef, onion, and rice, baked to perfection and smothered in rich tomato sauce.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 onion, chopped
  • 0.75 cup uncooked instant rice
  • 0.75 cup water
  • 1 (14.5 ounce) can peeled and diced tomatoes with juice
  • 1 (14.5 ounce) can stewed tomatoes, chopped
  • salt and pepper to taste
  • 6 large green bell peppers
  • 1 (16 ounce) jar spaghetti sauce
Instructions:
  • In a large skillet or medium stock pot over medium heat, sear the beef and onion until nicely browned. Remove any excess fat.
  • Combine rice, water, diced tomatoes, and stewed tomatoes in a pot. Season generously with salt and pepper. Cook on low heat until rice is tender.
  • Preheat the oven to 325°F (165°C) while you prepare the remaining ingredients.
  • Prepare the bell peppers by removing the tops and seeds. If needed, make a small slice at the bottom of the peppers to help them stand upright. Then, stuff the peppers with the meat mixture.
  • Bake in a casserole dish in the preheated oven for about 20 minutes until peppers are tender. Serve topped with spaghetti sauce.
