Sausage and Rice Stuffed Peppers

Cheesy tomato soup-infused stuffed green peppers with rice and sausage - incredibly delicious!
Ingredients:
  • 6 large green bell peppers
  • 1 pound ground sausage
  • 1 large onion, chopped
  • 2 (10.75 ounce) cans tomato soup
  • 2.6666667461395 cups water
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 pound Cheddar cheese, shredded, divided
  • 3 cups uncooked instant rice
Instructions:
  • Prepare green peppers by slicing off the tops, removing seeds and membranes, and rinsing thoroughly. Boil a large pot of water and cook peppers for 15 minutes until tender-crisp.
  • In a large, deep skillet over medium-high heat, cook the sausage and onions until evenly browned. Reduce heat to medium, then stir in tomato soup, water, chili powder, garlic powder, salt, and pepper. Bring to a low boil, then reduce heat to low and stir in 3/4 of the cheese. Simmer for 1 hour.
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Cook instant rice as directed on the package. Fluff with a fork, then combine with tomato mixture and simmer for 30 minutes.
  • Fill the peppers with the rice mixture using a spoon.
  • Bake in preheated oven for 30 minutes, then top peppers with the remaining cheese and broil until cheese is melted and bubbly.
