Stuffed bell peppers packed with lasagna goodness: beef, sausage, ricotta, mozzarella, and rice.
Ingredients:
  • 4 large green bell peppers, tops and seeds removed
  • 0.5 pound ground beef
  • 0.5 pound Italian sausage
  • 1 small onion, chopped
  • 0.5 cup spaghetti sauce with mushrooms
  • 1 cup grated mozzarella cheese, divided
  • 0.5 cup ricotta cheese
  • 0.5 cup cooked white rice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Bring a pot of gently salted water to a boil. Reduce heat to medium-high to keep a steady simmer. Cook peppers until they slightly soften, around 5 minutes. Drain on a paper towel-lined plate.
  • In a heated nonstick skillet, cook ground beef, sausage, and onion until meat is no longer pink and onion is soft, about 5 to 6 minutes. Use a slotted spoon to transfer to a bowl.
  • Combine spaghetti sauce, 1/2 cup mozzarella cheese, ricotta cheese, and cooked rice with the beef mixture. Stuff the mixture into 4 bell peppers and place them in a baking dish. Top the peppers with the remaining mozzarella cheese.
  • Cook until the cheese is melted and golden brown, for about 25 to 30 minutes in the preheated oven.
