Cheesy beef and rice stuffed bell peppers - a delectable combination of flavors!
Ingredients:
  • 4 green bell peppers, halved lengthwise and seeded
  • 2 tablespoons olive oil, divided
  • 1.25 cups water, divided
  • 0.5 cup rice
  • 1 cube beef bouillon
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon dried oregano
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) package shredded Cheddar cheese, divided
  • 0.25 cup grated Parmesan cheese
  • 0.5 cup ketchup
  • 0.5 cup Worcestershire sauce
Instructions:
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • On a baking sheet, arrange pepper halves skin-side up and massage them with 1 tablespoon of olive oil.
  • Place peppers, skin-side down, in a baking dish. Broil in the preheated oven until beautifully browned and tender, about 10 minutes. Remove from oven and reduce oven temperature to 350 degrees F (175 degrees C).
  • In a saucepan, work your magic by bringing together 1 cup of water, rice, and a beef bouillon cube. Let the mixture reach a boil, then lower the heat to medium-low. Cover and let it simmer until the rice is tender and has absorbed all the liquid, around 15 to 25 minutes.
  • In a large skillet, sauté onion and garlic in olive oil until onion is soft and translucent. Mix in ground beef, onion powder, garlic powder, and oregano. Cook until beef is browned and crumbly.
  • Combine tomatoes, half of the Cheddar cheese, cooked rice, and Parmesan cheese into the beef mixture, stirring until the cheese is melted. Remove from heat.
  • Combine ketchup, Worcestershire sauce, and water in a bowl. Fill each pepper with layers of ketchup mixture, rice mixture, more ketchup mixture, another layer of rice mixture, and the remaining Cheddar cheese on top.
  • Roast in the oven until peppers are tender and stuffing is warmed, around 45 minutes.
