Cheesy beef and Spanish rice saute, served with corn tortillas and salsa. Flavorful and satisfying meal.
Ingredients:
  • 1 cup white rice
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1.25 cups water
  • 1 (10 ounce) can red chile sauce
  • 1 (8.75 ounce) can sweet corn
  • 1 pound sirloin, cut into 1 inch cubes
  • 1 (15 ounce) can Mexican-style tomato sauce
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Heat oil in a medium saucepan. Toast rice over medium heat until golden, about 5 minutes. Add onions and green peppers; cook and stir for 1 minute. Pour in water and half of the chili sauce. Bring to a boil, then add corn, lemon juice, and salt. Cover and simmer on low heat for 20 minutes.
  • Saute the beef with the remaining 1/2 cup onion and 1/2 cup green pepper until the meat is no longer pink and the vegetables are tender.
  • Pour in the rest of the chili sauce, tomato sauce, cumin, and 1/2 teaspoon of salt. Let it simmer without a lid for 15 minutes.
  • Transfer the fluffy rice onto a platter. Scatter it with a generous amount of cheese, then generously pile on the flavorful beef mixture. Serve right away for a delicious meal.
