Chilli and lime steak with avocado salad

Grill up zesty chilli lime steak for a tasty weeknight fiesta this spring.
Ingredients:
  • 1 tsp dried chilli flakes
  • 60ml olive oil
  • 80ml lime juice
  • 1 corn cob, husk and silks removed
  • 4 Graze Grass Fed Beef Porterhouse Steaks
  • 1 avocado, stoned, peeled, thinly sliced
  • 6 radishes, thinly sliced
  • 50g snow peas, thinly sliced lengthways
  • 60g pkt Baby Rocket
Instructions:
  • In a screw-top jar, mix together garlic, chili, oil, and lime juice. Shake vigorously until well combined. Place the steaks in a large glass or ceramic dish, pour half of the lime juice mixture over them, and coat evenly. Let it sit for 10 minutes to enhance the flavors.
  • Heat up the barbecue grill or chargrill on high. Grill the corn, turning occasionally, for about 10 minutes or until charred and tender.
  • Cook the steaks for 3-4 minutes on each side for a perfect medium doneness, then place them on a plate and cover with foil. Let them rest for 5 minutes before serving.
  • Carefully cut the kernels off the corn using a serrated knife. Combine in a large bowl with avocado, radish, snow peas, and rocket. Drizzle with the remaining lime juice mixture and gently toss. Serve the steaks and salad on serving plates with lime wedges on the side.
